The high vegetable content in these fritters counts towards your five-a-day, while the haloumi will give them a unique taste and texture. Serve as a healthy snack or with a green salad and some crème fraiche or natural yoghurt for a light meal.

Ingredients

Instructions

  1. Squeeze out the liquid from the zucchini, then place in a bowl.
  2. Add the sweetcorn and haloumi and stir to combine all the ingredients. Create a well in the centre of the mixture and add the flour, oregano and egg. Season and stir until thoroughly mixed.
  3. Preheat your air fryer to 200C. Drop tablespoonfuls of the raw ingredients onto the rack. Cook for around 8 minutes or until crisp and golden, then transfer to a plate. Repeat until all the batter has been used up.
  4. Put the fritters on a plate and serve with yoghurt, seasoned with black pepper and drizzled with olive oil. Toss the extra oregano on top for the finishing touch.
