    Ingredients

    • 2 red chilli powders (small)
    • 1 cup Cauliflower florets (or one swede)
    • 4 Green shallots (or one red onion, finely chopped)

    • 1/2 cup Pepitas (lightly toasted)

    Instructions

    1. Grate the carrot, zucchini and cauliflower
    2. Use a blender with a grater attachment if possible that way you can simply add the rest of the ingredients to the blender bowl
    3. Stir through green shallots and divide among four large, broad class jars
    4. Top each salad with the dressing of your choice and seeds
