Juicy and flavoursome thighs that are just perfect for family meals or BBQs. The herby, citrusy marinade draws out the chicken flavour perfectly.

  1. Mix the chicken stock, lemon juice, lemon zest, olive oil, garlic, Dijon mustard, thyme, oregano, 1 ½ teaspoon of salt and 1 ½ teaspoon of pepper in a medium-sized bowl.
  2. In either a large bowl or ziplock bag, mix the chicken with the chicken stock mixture. Leave to marinate for at least 2 hours to overnight. Remove the chicken from the marinade.
  3. When you’re ready to cook, heat the oil in a cast-iron grill pan over medium to high heat. Add the chicken in batches in a single layer and cook until thoroughly cooked and golden brown. This should take around 4 to 5 minutes on each side. The internal temperature should be 74 degrees Celsius.
  4. Serve immediately.
