Ingredients
- 1 portion barbecue pork (slow cooked)
- 4 soft bread rolls (cut in half lenght wise)
- 2 tablespoon whey-good mayonnaise
- 1 Carrot (cut into thin batons)
- Cucumbers (sliced)
- 1/4 cup Coriander (fresh) (chopped roughly)
- 2 Shallots
- squeeze Lemon wedges
Instructions
- In a small frying pan, heat the pork, add in a little stock or water if required
- Spread one side of the bread roll with mayonnaise
- line with sliced the sliced cucumber and thin carrot batons
- Fill each roll with a quarter of the pulled pork, top shallots and coriander and lime juice
- Serve immediately
