Berry Omelette
If you’re looking for ways to cut down on your sugar intake but still enjoy a sweet treat, this berry omelette recipe is made for you.
There’s no need for added sugar here thanks to rice malt syrup, a natural sweetener extracted from brown rice. You’ll also find natural sweetness in the berries, which you can order fresh or frozen in your regular fruit and veg shop.
Mixed berries are one of nature’s superfoods, offering high levels of a variety of nutrients.
Raspberries, blackberries and blueberries are known to have the highest levels of antioxidants among fruits. Antioxidants are powerful protectors of the human body, helping to keep unstable molecules called free radicals under control. When their numbers get too high, free radicals damage your cells, which in turn can lead to disease.
You’ll also find high levels of vitamin C in berries to keep your immune system healthy, as well as vitamin K1, which plays a vital role in blood clotting and brain and heart health.
A 100 gram serving of mixed berries will also supply 32% of the recommended daily intake of manganese. This vital mineral helps keep your bones healthy and stimulates your metabolism, among many other roles.
As well as being nutritious, what we love about this recipe is its versatility. Berry omelette makes an ideal breakfast, setting you up for the day with protein-packed eggs and all those vitamins and minerals. We suggest serving it with mascarpone cheese or yoghurt, but you could also serve it with a delicious fruit salad.
Berry omelette also makes an easy after-dinner dessert. For pure indulgence, add whipped cream or a drizzle of chocolate sauce as the finishing touch.
Preparing omelettes is usually straightforward, so even if you’re an amateur cook, you should find this recipe super easy to follow.
