    2. In a separate bowl, beat the egg whites until thick and fluffy, then fold into the yolk and sugar mixture
    3. Melt the butter in a twenty-two cm omelette pan over low heat
    4. Pour in the eggs and sprinkle the fruit over the top
    5. Cook over low heat until he base golden
    6. Transfer the pan to your oven grill and brown very slightly
    7. The omelette should be firm but a little bit creamy
    8. Serve with mascarpone cheese or yoghert
