Bok choy and noodle stir-fry

If you haven’t already ventured into the world of Asian cooking, this recipe is perfect for getting you started.

It’s simple, tasty and full of fresh ingredients that all the family will love. It’s also quick to cook, so makes an ideal mid-week evening meal after a busy day when you don’t want to spend much time in the kitchen.

The main ingredient is bok choy, a crunchy Asian vegetable, which you can get from your regular fruit and veg shop. It has a subtle taste that works well with the stronger flavours of ginger and garlic used here.

It’s also known as Chinese cabbage and is really easy to cook. It’s usually added towards the end of cooking time and will wilt quickly, a bit like spinach.

Bok choy has a lot to offer in terms of nutrition, containing a good array of vitamins and minerals. It’s especially high in vitamin C, which helps keep your immune system strong, and vitamin K, which has a role in blood clotting, helping wounds to heal and also keeping your bones healthy.

The shiitake mushrooms are also typical ingredients of Asian cuisine. Their rich, earthy taste lends depth to this dish, and they offer lots of health benefits too. They’re particularly rich in B vitamins, which perform a variety of roles including turning your food into energy.

Shiitake mushrooms are also surprisingly high in the mineral copper, which helps your body produce energy and process iron, to name just two functions.

Add in the ginger, garlic and chilli and you have a tasty and fiery dish, perfectly balancing the spices with the subtler flavour of the bok choy, mushrooms and noodles.

Instructions

  1. Place the noodles in a saucepan of boiling water and cook for 3 minutes or until soft. Drain.
  2. Heat the oil in a deep frying pan or wok. Add the ginger, garlic and chilli and cook for 1 minute.
  3. Add the bok choy and mushrooms and cook for 2 minutes.
  4. Add the chicken stock and soy and allow to cook for a further few minutes or until the bok choy is soft.
  5. To serve, place the noodles in a bowl and top with the bok choy mixture.
